Eating with a clear conscience – feeling good about everything I put into my mouth – lights up my life.
Albert Einstein said, “Nothing will benefit human health and increase chances for survival of life on Earth so much as the evolution to a vegetarian diet.”
I used to love steak, overstuffed pastrami sandwiches, and all kinds of rich, scrumptious, satisfying food. When I decided to become a vegetarian, and then a vegan, in order to reduce my carbon footprint, improve my health, and for a number of other reasons, I took my taste buds along for the ride.
In fact, I became obsessed with the idea of creating vegan food that’s just as mouth-watering and delicious as anything I ever tasted as a meat-eater. By sharing what I discover, others can enjoy making the switch, too.
Change is hard. I try to make it easier. Vegan cooking and eating is actually anything but boring. When I help people enter the process of becoming vegan by seeing all the abundant , great-tasting options, I help both them and the planet.
There are so many reasons to eat a plant-based diet. I feel better in my body and about the contribution I make to the Earth in this way. I feel so strongly about it that I try to spread a little veganism wherever I go, encouraging others to at least explore the possibilities.
With every bite we eat we have the chance to help in ways that impact lives far beyond our own. To me, food simply tastes better when I make choices that go deep.
You can do it, too. Rather than forcing a radical change, ease in at a pace that feels comfortable. Even if you cut out animal products only two days a week, you can make a huge difference in your health and in the health of our planet.
